Pecan Crusted Catfish
1/2 cup nonfat plain yogurt 4 or 5 shakes of Louisiana hot sauce 1/2 tsp. Old Bay Seafood Seasoning 1/2 tsp. good chili powder 1/2 tsp. garlic salt 2 cups cornflakes 1/2 cup pecan pieces 1 pound catfish fillets cut into 4 portions
Preheat oven to 375*F.
Line a baking dish with aluminum foil and spray with non-stick oil product.
Mix first 5 ingredients in a pie pan or high sided dish.
Pulse cornflakes in food processor until pieces are no larger than lentils or split peas. Add pecans pieces and pulse them a few times. Dump mixture into a separate pie pan or plate.
Dredge the catfish portions in the yogurt mixture. Heavily coat each portion with the cornflake pecan mixture.
Bake 20 - 25 minutes, remove from oven, serve immediately.
A nice honey mustard horseradish remoulade would be nice with this, and a side dish of grits with shrimp scampi on top.

That sounds delicious. Of course, I never get 'non-fat' nor 'low-fat' yogurt...I only use Greek yogurt which has plenty of fat. I also would prefer either shrimp or scampi on rice, but it certainly sounds like something I would love to sit down to a plate full of.
