I just made my first loaf of gluten-free banana bread... and man is it good. I thought I would post a picture to make everybody drool. I just pulled it out of the oven and my mother asks me if she can have a piece as she's heading to bed... supposed to let it cool a bit so it doesn't crumble so much but I let her have a piece anyway. I am now going to get a second piece. After that I will be full. Mmmmm, mmmm. Here is the recipe: Ingredients: 1 stick margarine or butter, softened . 3 large or 3 1/2 small very ripe bananas 2 cups rice flour ( or prepared gluten free baking mix) 1 cup sugar 1 cup pecans, finely chopped or ground 2 eggs 2 teaspoons gluten free baking powder 1 teaspoon gluten free vanilla
Directions:
In a large bowl, cream butter with sugar. Beat in eggs, vanilla and bananas. In another bowl, mix together flour and baking powder. Combine and beat until dry ingredients are moist. Stir in pecans. Turn batter into 5 x 9-inch loaf pan. Bake at 325 degrees for one hour and 20 minutes or until toothpick comes clean out of center. Do not under bake. Yields one loaf of 10 large slices. Toasts very well with pecans added as finely ground flour.

Terry, Congratulations on something delicious and gluten-free.I will tell my wife about this banana bread recipe and see what she says. I am suprised you could have a non-crumbly texture without the xanthan/guar gum!
My wife and 2 of my kids have been on a gluten-free (GF) diet for a while now. I guess I am just stubborn! My favorite GF recipes have been our GF Cornbread, our Chocolate Mochi (Kind of like a brownie- but better), a white cake, and a muffin recipe. I would say that I enjoy the texture of everything else my wife makes Gluten-Free but that would be a lie. We make everything from scratch.
Anyway- if anyone wants recipes for those 4 things just let me know and I will type them out here. I say this because I know that those of you who have to deal with the texture of GF would appreciate something with a nicer texture once in a while.

Mule- Have you tried the blended-up flax seed in water? If so, how does that work for you?

wish it didnt have eggs or butter son cant have either and has been gluten free 9 years. It is VERY hard to find things without gluten, dairy and eggs. Somethings exist but not many. I sure would like to find some kind of suitable binder that did what eggs can do. I cannot have any dairy either. I found BestLife Buttery Spread that has no gluten or dairy in it. I always read the ingredients even if it says gluten free.
