This weeks pick is Opalka, I don't grow a lot of paste tomatoes anymore since IMO ox-hearts are better saucers, however..Opalka is a great tomato for sauce and is very productive. Not so much for eating out of hand but very good cooked. Also, I know it is not Sunday, but I am super busy, and wasn't sure I would be here Sun.. to post.

I grew Opalka once and didn't care for it fresh. Didn't cook or can with it.

Someone from MI sent me seeds a while back. I've yet to grow them. Looks like I'm not missing much.

When I grew Opalka, none of the tomatoes made it into sauce. They all got eaten sliced on salads. Delicious!
There's a lot of faux Opalka floating around the boards, in my opinion. I've seen tomatoes that didn't look anything like Opalka being passed off as Opalka. I think everyone should give the real deal a go 'round at least once. Great tomato.

Ciao all-
Opalka is my absolute favourite commercially-available tomato, bar-none. Not only does it make an outstanding sauce or improve the flavour of anything you could even imagine making with tomatoes, but like PV said, it's fantastic fresh as well. Every year I trial several different large red pastes, and this one has never left my top 5 overall. If I had the space, I'd never be without this one.

IMO Opalka is a second string also-ran of the family of cows-horn paste's.
I'll grow Cows Tit, or Gilbertie before Opalka.

As I stated before, I will grow an ox-heart before a paste for double duty, they are great on burgers or blt's and they make alot more sauce than conventional pastes. And Ox-hearts taste good right in the garden with a touch of sea salt!!!

Well, this is my first growing of Opalka, and I'm hoping it's the real deal. I should get some of the maters by July 1.

I'm with TomC, i think opalka is overrated. There are better in that type. Dad's Barber comes to mind. I grow another called Manny that makes a larger fruit with better flavor.

I love the Opalkas. The production for me has been unbelieveable!! Most of mine this year have in the 8 oz. range. Here are 2 picutures. My husband only knows if it is a tomato and what color it is. He thought these were hearts b/c of the stem end. He has told everyone how great the "hearts" are.!
