Are there any vegetarians in here.....I am not one but, am thinking on cutting down on my red meat and thought maby I could find some great vegetarian recipes in here.. So if you have any Yay for me!! Like one I am looking for is avacado dip...

W8in, now c'mon. When have you ever seen Guacamole with red meat in it? Unless of course it's got a side of salsa with meaty tomatoes ;D Try this one. It has all the right ingredients as far as I know? allrecipes.com//Recipe/guacamole/Detail.aspx

I have been both vegetarian and vegan, not either of those now. Now I am a meatarian. To me, great guacamole starts with great choices in produce. I have seen folks use things like mayonnaise, sour cream and cream in guacamole which is terrible. For me...this is where it starts.
2 medium or 3 small avocados, I like Haas for consistency 1 small/medium sweet yellow onion, 1/8" dice 1 small jalapeno or 2 small serrrano chile peppers, finely chopped 1 lime, rolled and juiced 1 small lemon, rolled and juiced, I prefer Meyer lemons
Dump this all into a molcajete or other mortar and pestle, mash to a coarse texture. Test for salt and pepper and adjust to taste. This is the basic dip. From there, you can top with the outer flesh of a tomato, i like to remove the seeds, strain the gel and add it back to the tomatos along with some chopped onion and cucumber. Add a little salt to make it a salsa. Top guacamole with the salsa.

I am not a vegetarian (Mankind did not kill his way to the top of the food chain to eat carrots and celery!). If I were to become one, I would probably move to India, as they seem to understand how to make meals out of plain & simple veggies. Here in the US, one of the best vegetarian cookbooks I have ever seen is the "Moosewood Cookbook" (from the Moosewood Lodge in Ithica, NY). Many of those recipes are available online at the author's site: www.molliekatzen.com/If you cannot find some delicious veggie recipes there, it's time to learn how to butcher a cow! Enjoy!

Wendy, you can use plain mashed avocado in lieu of mayonnaise on sandwiches. Look up recipes for green rice, you might like that. If made with brown rice, cheese, eggs, milk and sunflower seeds, it is a nutritious main dish. Also falafel patties are good--made with ground garbanzo beans (chickpeas). It is a flavorful and satisfying substitute for meat. Using whole grains is one of the keys to good nutrition when cutting back on meat.

Thanks I know red meat is not in quaq....Sillys!! I just needed a recipe from my buddies Great Idea on the sandwiches tho My hubbs hates Quaq.. He hates to even look at it I love the stuff! Love chick peas also thanks for that tip to

FALAFEL Ingredients: • 1 15 oz. can chickpeas, drained • 1 medium onion, finely chopped • 1 tablespoon minced garlic • 2 tablespoons fresh parsley, finely chopped • 1 teaspoon coriander • 3/4 teaspoon cumin • 1/2 teaspoon salt • 2 tablespoons flour • oil for frying (canola or vegetable) Preparation: Combine chickpeas, garlic, onion, coriander, cumin, salt and pepper (to taste) in medium bowl. Add flour and combine well.
Mash chickpeas, then mix ingredients together. You can also combine ingredients in a food processor. You want the result to be a thick paste.
Form the mixture into small balls, about the size of a ping pong ball. Slightly flatten.
Fry in 2 inches of oil at 350 degrees until golden brown (2-5 minutes).
Serve falafel by itself, or with hot pita bread with veggies, hummus, or tahini sauce.

Snack recipe.
Honey Chipotle Pecans 2 tbsp. honey 1 1/2 tsp. dried chipotle powder 1 tsp. ground cinnamon 2 C. pecan halves 2 tbsp. granulated sugar 1 tsp. salt
Preheat the oven to 325. In a medium microwave safe mixing bowl, combine the honey, chipotle powder, and ground cinnamon. Warm through. (You can also do this on the stove in a small saucepan over low heat.)
Stir nuts into warmed honey mixture. Still well to coat. On a parchment paper-lined baking sheet, spread honey-coated nuts in a single layer. Bake until toasted and fragrant, about 15 minutes.
Remove from oven and allow to cool only slightly (no more than a minute or two-- you want them to still be sticky.)
In a clean, medium sized mixing bowl, combine the sugar and salt. Dump the hot nuts in the bowl and toss to combine. Lay nuts out on waxed paper to cool, separate them from each other so they don't harden into clumps.
*I think this recipe would work with almonds or peanuts, and possibly with Brazil nuts. I do not think it would work well with walnuts.

Been vegetarian for 18 years and vegan for 15. Have lots of recipes. At work right now but will pm you later with some that you might like. As a southern guy my recipes have a little "soul" to them but are still quite healthy. I highly recommend the book Vegan Soul Kitchen for some tasty vegan/vegetarian variations of the traditional "southern" cuisine. What type of cuisine do you usually favor? Mine is varied. I'm sure i have some things that you would like to try.
