I made 2 loaves of Bread yesterday and I ummm burned one loave..and the other turned out like a rock.... Ok so both were my fault ..but in the mean time I need some Recipes I am going to go get me a nice Dutch Oven tomorrow..We have one but it doesn'thave a lid.. Hoping to make some of that "no knead" bread...Anyone have some great tried and True recipes???

silly question...but why do you need a dutch oven to make bread?

Beer Bread needs no kneading. It's basically soda bread using self-rising flour, flat beer, a little bit of sugar and some margarine. Simple. Chewy, cuz something the beer does to the flour similar to sourdough. Real tasty too.

Come on Papa recipes sweetpea recipes!! I cannot go by a lil of this and that LOL, The answer to your question is.....The new great Recipe is.. Baking it in a dutch oven I need a dutch oven anyway..Our nice cast iron one is up north so I need one here Let me look up the recipe and I will show you

My Betty Crocker's Cookbook has a good recipe for making no-knead Casserole Bread in a 2-qt. casserole.
I modified it to mix and match onions, garlic, shredded Swiss cheese and a topping of parmesan and black pepper. I substitute 1/2 whole wheat for the unbleached flour. With modern quick rising yeast, it's a quick process.
I learned to knead bread from Bread Winners by Mel London. Lots of recipes to customize.

3 cups self-rising flour 1 can (12 oz) beer, actually I like a dark beer or ale 3 Tbs sugar or honey
Mix it up like stiff pancake batter
Spoon it into a well buttered (or Criscoed) 9" x 5" loaf pan
Bake it off for 50 - 60 minutes in a 350*F oven, 'til the top thumps hollow and a wooden skewer comes out clean
Cool before de-panning. Slice, butter, eat
Or butter and toast it in a frying pan for extra calories and a bit of crunch

Yes, you can add all kinds of stuff. Grated cheese is good. Chopped up jalapenos too. You can dust the greased pan with corn meal for some extra goodness. Get funky widdit. Precooked sausage crumbled up and baked in there is good too. Or Pepperoni. Whatever turns your paddle wheel.

Cape Breton Scones (sour cream scones)
2 cups flour 2 TBLSP. sugar l TBLSP. baking powder 1/2 tsp. salt l/4 tsp. baking soda l cup dry currants , dry cranberries or dry blueberries l/2 cup sour cream l/4 cup vegetable or olive oil l egg; slightly beaten 3 TBLSP. milk + a bit more milk and sugar for tops
Sift together the dry ingredients, and stir in dry fruit. Blend the remaining ingredients in separate bowl, and then stir it into the flour mixture until the dough comes together. Throw small handful of flour on top of dough (in bowl) and knead lightly a few times. Divide the dough in half then pat each into approx. 6" . Cut into desired number of wedges. Paint with milk and sprinkle with sugar. Bake at 425 (F) degrees for 10-12 minutes, or till golden.

Irish Soda Bread
2 cups white flour (+ a bit more in reserve for the kneading) 2 cups whole wheat flour 1 tsp. baking powder (Rumford's or other non-aluminum type) 1 tsp. baking soda 1/4 tsp. salt 1/2cup currants or sultanas (yellow raisins) 1-1/2 tsps. caraway seeds approx. 1-1/4 to 1-1/2 cups buttermilk (enough to make dough hold together)
Oven 375. In a large mixing bowl, place flours, baking powder, baking soda, salt and stir together, stir in fruit and caraway seeds. Add sufficient buttermilk to make a firm dough, which is not dry. When dough has formed into a nice firm ball, sprinkle with about one tablespoon of flour and knead lightly until dough is smooth, about two minutes.
Form dough into a circle by tucking edges in repeatedly. When you have a plump circle of dough, place it on a parchment covered baking sheet (or lightly oiled baking sheet). Score bread with a sharp knife, make an X across the top. Bake for 35-40 minutes. Bread is done when it sounds hollow, when rapped across the bottom with your knuckles. One loaf produces about fifteen slices of bread. Good for corned beef sandwiches, or just toasted with a spread of butter (and perhaps marmalade).

Yes, Carl's Friends is a good place to get starter. The original starter came west on the Oregon Trail in the 1800's. They have been sharing ever since. A SASE will get you the real McCoy.

Wow wow wow Thanks everyone.. I have figured out what I was doing wrong...First of all I needed to think.....Hmmmm what would my mama do in this situation?? Of course Sift Duhhhh So today I made a bread, a no knead bread, ( sorry did not see these post) and any hoo not only did I sift .. (Should of sifted all dry ingredients Lorna huh?) But it said to let it set for 50 min till dough was twice the size.. well I waited 50 minutes .. w8n w8n w8n .. and looked and it didn't even rise... ohhh what would my mama do?? Put it somewhere warm!!!! Ohhhh thats it!! Ummm only place I have is the bathroom so it went in there and another hr. and it was doubled in size and I put it in the bowl and baked it and lo and behold it was not a soft ball hard rock!! Thank you! thank you!.. now we are going up north this week and I am going to make more! (yes I am) and I am going to make the very nice recipes ya'all have right here!! Thanks!! Every single recipe before this post anyway If I make to much I'll give it to the neighbors heheheheeeee
