Tomato Marmalade Recipe Ingredients: 6 cups tomatoes (after cutting) 1 orange 1 lemon 5 cups sugar 4 whole cloves broken cinnamon stick ( I used ground and it worked fine) 1/4tsp. 6 oz. of my homemade pectin (from apples) Directions: Remove peel from tomatoes and cut in small pieces. Slice oranges and lemons very thin and quarter the slices. Add sugar. Stir until the sugar is dissolved. Add oranges, lemons, pectin, and spices which have been tied loosely in cheesecloth bag. Place mixture over high heat and boil rapidly, stirring often. Cook until clear and thick (about 50 minutes). Remove spice bag. Temp should be about 220, or test on cool plate. Pour into sterilized jars to within 1/2 inch of top. Put on cap, screw band firmly tight. Process in boiling water bath 10 minutes. makes 5 half-pints

Ozark, That's a tasty looking marmalade you've whipped up. Thanks for posting the recipes as well. The reason most recipes recommend whole spices in canning is that powdered ones can make a jelly cloudy. For something like this that has chunks of fruit and zest in it, it's not really a problem though.

I like tomato jelly, and orange marmalade so when I came across this recipe I couldn't resist. It tasted pretty good as I was licking the pot and the spoon!
I adapted it a bit, used less peels, and homemade pectin instead of the boxed ones. Imagine it with the different colored tomatoes... that could be awesome!

Here's a recipe that might also be of interest to someone? It is from my Great Grandmother who passed away during WW II at the age of 92. So, I don't honestly know whether she ate this strictly as a spread or if she used it as a condiment with meats or cheese?? There is no one left to ask from my maternal family.
Tomato Sandwich Filling
12 ripe tomatoes 3 onions 1/4 cup salt 1-1/2 cups sugar 1 cup vinegar 4 red peppers 1 green pepper 6 tsp mustard (dried) 1-1/2 cups flour
Cook onions and tomatoes until soft. Put through sieve. Then add salt, sugar and vinegar. Add peppers which have been chopped. Heat this mixture, add mustard and flour, which has been made into a thin paste with the addition of a little vinegar. Mix, boil until thick. Seal.
Note: Blanch and peel the tomatoes first, then you won't have to mash then through a sieve. That's what I would do. Then if you want to chop them into small chunks they would cook down easily for a smooth finished product.

I kept re-reading the ingredients... tomato, sugar, okay sweet, then vinegar, hmm not that sweet, peppers... I finally hit it... You know I do believe that is the recipe for MANWICH just make that, can it up and you could actually add the flour thickening later... Cook your ground beef open a jar... and you should have something very similar to manwich, or with just a bit of fine tuning you could get there! I bet she canned it up, and had it in reserve then when the guys went hunting and she got in fresh game...squirrel, rabbit, or deer, then she would boil those tender, then open a jar and add the finishing touches! Awesome... gotta try this one!

That's possible I suppose that they would eat it with ground or pulled meat? But none of her daughters or granddaughters ever made anything like that so I doubt it. Either that or they were so sick of eating it that they never ate it once they left home, lol Let me know how it turns out. I make Sloppy Joe's about once every 5 years and even then the reaction is a big Groan...
