Are there really low-acid tomato varieties? The only tomato to show a lower acid content is Jetstar. Otherwise they are all pretty close on the acid scale, the sugar content or lack of controls the taste more than the acid. Darth

Ace-55, I think, also is a tomato that USDA cautions is low acid and requires additional lemon juice, etc., to adjust the pH for canning.
Ace-55 was used in breeding and I've always wondered if it's in the background of Jet Star.

Oh, and believe it or not, I think some of the San Marzano lines have tested out with a pH high enough for the USDA cautionary notes about canning.
But then I thing some of the canner types are harvested on such a timeline as may be "before their time" with regard to the full ripeness and fully developed acidity.
