Ciao all- These are super easy to make, fun for kids, and disappear quickly so you may want to double the batch. 2 c. all-purpose flour 1/2 c. firmly packed brown sugar 1 c. butter, softened 2 eggs, separated 1/8 tsp. salt 1 tsp. vanilla or almond extract Suggested coatings: 1 1/2 c. finely chopped peanuts, almonds, pecans or walnuts Coloured sugars Cinnamon sugar Suggested toppings: Chocolate mint or other jelly Hershey kisses Candied cherries Caramels Heat oven to 350F. In a large mixing bowl, combine all ingredients except egg whites. Beat at low speed, scraping bowl often, until well mixed (2-3 min). Shape rounded teaspoonfuls of dough into 1" balls. In a small bowl, beat egg whites with a fork until foamy. Dip each ball into egg white. Roll in choice of nuts. If using coloured or cinnamon sugars, no need to roll in egg white first. Place balls 1" apart on greased cookie sheets. Make a depression in the centre of each cookie with the back of a teaspoon or thumb. Bake for 8 minutes. Remove from oven onto trivets and fill centres with choice of suggested toppings. Continue baking for 6-10 minutes or until golden. Cool completely on racks and store in an airtight container for up to a week (if they last that long). Here are some I made after the Haitian earthquake to raise awareness and garner support for the relief effort.

Whoa! Never made them in colors, kinda bright. I like them rolled in chopped pecans, and with Nutella or my new almond/white chocolate version.

i made these for the first time with our homemade jam...added winter squash to the recipeanbd usedm whole wheat flour...delish!

Ciao Bob- Yeah, the Haitian flag is bold red and blue and I didn't want them looking like a co-ed baby nursery. I do a LOT of baking as you know, so those coloured sugars and other decorations are in plentiful supply around here.
