They look great! Are going to let any ripen to red? When trying new peppers I always try them green and then ripe, as there are a few I like in different stages for different uses.

I was hoping that these would be a Sweet frying pepper, but a little googling reaffirmed my fear that they would be a hot variety. Ah well.

They are mildly hot, and then only once in a while. The flavor is great. They have a slight tang, not really hot.

I found an old SSE catalogue. They list Beaver Dam as being a 3 on a scale of 0 to 5 for heat. "Mildly hot when seeded" it states.
Hot Portugal and Black Hungarian are also listed as a 3 by the SSE. These are family favourites at my house.
I also like the suggestion that the Hussli family (SSE contributors of Beaver Dam) make of serving raw slices on a cheese and bologna sandwich. Or to make stuffed peppers. Mmmmmm, I can taste it now, lol

I'd like to know if there is a significant difference between the taste of the green or the beautiful deep red I'm looking at in the SSE catalogue Maybe it's that Darth likes them sooo much in the green stage that he never lets them get ripe/red?
