I bought a large orange pumpkin for Halloween. Alas, we didn't carve it and it has been sitting on my counter for over a month now! My question is...do I cook it or compost it? We like pies, muffins and breads...no soups or savory dishes. Thanks, Michelle

Michelle, If there are no visible signs of rot, then cook it.

Connecticutt feild pumpkin has ah um a distinct odor when being boiled, I might gut it and roast it in largish peices, before baking into pies.
Boiling makes it too wet IMO. stanky too.

peel it with a potato peeler to remove the rind.cut it in half.remove seeds ect....put it in the oven in a waterbath.inch or so of water.350 degrees for an hour or hour and a half.drain water and mash it into puree....smiles
