So, how do you like to eat tomatoes once you have harvested them. We have waited all winter to start seeds, let's start the anticipation of the eating now. I will start.
Tomato Salad: my take on a salad I had at the Martini House in St. Helena.
2 large beefsteak tomatoes, one pink, one yellow 1 medium red tomato 5 Sungold 6 pickled currant tomatoes
several rings of pickled red onions small amount of bitter salad greens candied pecans crumbled feta cheese or cotija tajo croutons
sweet balsamic dressing with EV olive oil
thickly slice beefsteak and red tomato, you should get 2 to 3 slices from each fruit. Split Sungolds in half. Tile the slices on a plate, salt with medium sal gris or kosher salt, place Sungold halves and pickled currant tomatoes around side. Arrange onions in a mound off to side of plate, sprinkle pecans, cheese and croutons over lettuce placed to opposite side of tomatoes. Dress everything with a drizzle of salad dressing.
This salad is best if everything but the tomatoes and croutons are cold. The tomatoes should be warm from the sunny garden. I would hit the salad with some nice crunchy salt as well.

Oh, I forgot, I use Tom's Yellow Wonder and Marianna's Peace for this, a Moneymaker or two for reds. But, any good tomato combination would be great.

I'm with bunkie- and a fresh tomato in the garden with an onion(scallion/green) and a bit of fresh basil.
Ok now I'm hungry.

Tomato Basil Salad with vinagrette. No cheese. No fancyschmancy vinegar in the dressing. Just EVOO & white vinegar mixed with a mess of ripe tomatoes and fresh basil to taste..Maybe a grind of black pepper and a pinch of salt..
It doesn't get any better than that, IMO.

Just white vinegar? Wow, that is simple.

Or...Sliced tomatoes with a sprinkle of sugar and then drizzled with vinegar.
Yes, JT, I imagine you could use Balsamic. I just find it too sweet? Just Me.

BLT on a croissant with EVOO instead of mayo.
Tomato and avacado on squishy white bread with a little mayo salt and pepper.

All these recipes are making me hungry for fresh tomatoes, not the rubber ones from the grocery store

Penny, check your local Farmers Market and see if anyone there is selling locally grown greenhouse/hydroponic tomatoes. I've been getting them here from a local organic grower since the week before Easter. They aren't quite as good as fruit straight from our own garden, but they are most certainly a step above the cardboard supermarket toms.

Good idea, i'll have to see, and we are off to London this weekend to pack up our daughter at College and there are lots of roadside stands that might have some.
